Green Cassava Wraps
Serves 8 // 30 minutes
Ingredients
2 cups Spinach
2 Eggs
1 cup Water
1 cup Cassava Flour
Ghee for cooking
Method
In a food processor or blender, combine all the ingredients and blend until a smooth batter is formed.
Heat a frypan over medium heat and add ghee to the pan.
Once the pan has warmed up, pour about 1/4 cup of the batter onto the pan, spreading it out to form a thin circle.
Cook the wrap for approximately 3-4 minutes on one side or until the edges are set, and the surface appears slightly dry.
Carefully flip the wrap using a spatula and cook for an additional minute on the other side.
Repeat the process with the remaining batter, adding more ghee to the pan if needed until all the batter is used.
Once all the wraps are cooked, it's time to assemble your delicious wraps. Fill them with your favourite ingredients. Enjoy.
