Pesto Salmon Wraps
Serves 6 // 20 minutes
Ingredients
6x small wraps
2 salmon fillets
1 tsp paprika
2 tbsp Garlic and herb seasoning (i used the one from mingle)
3 tbsp pesto
1 avocado
Lettuce leaves (enough for 6 wraps)
Small handful of coriander, chopped
1 lemon
Method
Season the salmon fillets with paprika and garlic and herb seasoning. Heat the olive oil in a fry pan over medium-high heat. Cook the salmon for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the pan and let it cool slightly before flaking into bite-sized pieces.
Spread the pesto and avocado evenly on each wrap. Add a few lettuce leaves on top. Distribute the flaked salmon evenly among the 6 wraps.
Sprinkle over the chopped coriander and squeeze lemon juice. Enjoy.
