Cassava Flour Banana Bread
Serves 8 // 40 minutes
Ingredients
3 Banana’s
3 Eggs
1/4 cup Avocado Oil
3/4 cup Brown Sugar
1 Cup Cassava Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
Pinch of Salt
Method
Preheat oven to 180C. Line a loaf tin with baking paper or use a silicone loaf mould.
In a large bowl, mash the bananas with a fork. Once mashed, add in the eggs and avocado oil, and whisk until combined.
Add in the dry ingredients and stir until combined.
Pour the mixture into your prepared tin and bake for 20-30 minutes or until a knife can be inserted in the centre of the loaf and comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack. Slice into 8 thick slices and best served warm.
