Satay Salmon Noodles

 

Serves 4 // 30 minutes

Ingredients

  • 4 fillets Salmon

  • 2 tbsp Olive Oil

  • 270g Ramen Noodles

  • 1 packet Hart & Soul Satay Curry

  • 400ml Coconut Milk

  • 1 bunch Bok Choy, chopped

  • 2 cups Finely Shredded Coleslaw, I use the Woolworths one

  • 1 stalk Shallots, chopped finely

  • 2 tbsp Sesame Seeds

Method

  1. Cook the noodles in boiling water for 4-5 minutes. Remove from boiling water and allow to cool slightly.

  2. Meanwhile, empty the Hart & Soul Satay Curry into a saucepan over medium heat. Add in the coconut milk and stir for 4 minutes. Add in the bok choy and store for another 4 minutes. Remove from heat.

  3. In a frypan over medium heat, cook your salmon for about 4 minutes on eat side.

  4. Add in your noodles and finely shredded coleslaw in a bowl, pour over satay sauce and top with salmon. Garnish with shallots and sesame seeds. Enjoy.
