Satay Salmon Noodles
Serves 4 // 30 minutes
Ingredients
4 fillets Salmon
2 tbsp Olive Oil
270g Ramen Noodles
1 packet Hart & Soul Satay Curry
400ml Coconut Milk
1 bunch Bok Choy, chopped
2 cups Finely Shredded Coleslaw, I use the Woolworths one
1 stalk Shallots, chopped finely
2 tbsp Sesame Seeds
Method
Cook the noodles in boiling water for 4-5 minutes. Remove from boiling water and allow to cool slightly.
Meanwhile, empty the Hart & Soul Satay Curry into a saucepan over medium heat. Add in the coconut milk and stir for 4 minutes. Add in the bok choy and store for another 4 minutes. Remove from heat.
In a frypan over medium heat, cook your salmon for about 4 minutes on eat side.
Add in your noodles and finely shredded coleslaw in a bowl, pour over satay sauce and top with salmon. Garnish with shallots and sesame seeds. Enjoy.
