Frozen Yoghurt Slice

 

Serves 8-10 // 3-4 hours

Ingredients

  • 1 1/2 cups Dates 

  • 1/2 cup Coconut, shredded 

  • 1/2 cup Almonds 

  • 1/4 cup Pepitas 

  • 1/4 cup Coconut Oil 

  • 1 500ml of Coyo Frozen Yoghurt or Ice Cream, any flavour  

Method

  1. In a food processor, blend the dates, coconut, almond, pepitas and coconut oil until the mixture starts to stick together. 

  2. In a silicone loaf mould, press half of the mixture onto the bottom, make sure the mixture is even and place in the freezer for 30 minutes. 

  3. Meanwhile, leave the Coyo out on the bench, so it softens. 

  4. Take the base out of the freezer. With a spoon, evenly spread the Coyo over the base. Place back in the freezer for 2 hours or until the Coyo is set. 

  5. Once the Coyo is set, spread the rest of the base mixture evenly over the top of the Coyo, pressing gently. Place back in the freezer for another hour. 

  6. When set, remove the slice from the mould and slice it evenly into slices. Store the leftover in an airtight container in the freezer.
