Choc Banana Buckwheat Bread

 

Serves 8-10 // 1 hour

Ingredients

  • 1 1/2 cup buckwheat flour

  • 1/2 cup brown sugar

  • 3 ripe bananas

  • 1/4 cup maple syrup

  • 1 egg

  • 3/4 cup sparkling water

  • 80g dark chocolate (chopped)

Method

  1. heat your oven to 180°C. Grease and line a standard loaf pan with bake paper.

  2. In a large mixing bowl, peel and mash the bananas until smooth. To the mashed bananas, add the maple syrup, egg, and sparkling water, mix well.

  3. Sift in the buckwheat flour and brown sugar into the wet mixture. Stir until just combined.

  4. Pour the batter into the prepared loaf pan, spreading it out evenly. Place the chopped dark chocolate down the centre of the loaf.

  5. Place the loaf in the preheated oven and bake for about 45-50 minutes, or until a toothpick inserted into the centre comes out clean. Once completely cooled, slice the Buckwheat Banana Chocolate Loaf into pieces and serve.
